Spicy Chickpeas   serves 2

Tis easy peasy dish is perfect for a quick supper and full of good things

1 can chickpeas

1 chopped onion

1 can chopped tomatoes

1 bag of fresh spinach or 1 can drained spinach

1 teaspoon cumin

1 teaspoon oregano

chilli powder or flakes to taste

olive oil / teaspoon butter

Method

saute chopped onion in olive oil / butter until softened but not browned. Add cumin and stirfry for a couple of minutes

Add chickpeas , oregano & chilli

Add tomatoes & spinach

Add a little water if necessary

Mix all ingredients together and cook for about 15 - 20 minutes

Serve with brown rice , steamed carrots & broccoli
