Shiitaki is the most gourmet of the fresh mushrooms cultivated around the world. Shiitake mushrooms have all the essential amino acids (9) in a higher, more condensed proportion than soy beans, meat, milk or eggs. They provide us with essential vitamins and minerals, among them A,B, B12, C, D and Niacin. They are valued both for their flavor as well as their medicinal benefits.

Salmon with Shitake mushrooms and leeks

Serves 4

Take :

1 punnet of shitake mushrooms and slice

2 leeks and clean and slice

1 small clove of garlic

4 salmon fillets

Brown rice for 4 (cooked)

Simply add 1 tablespoon of olive oil to a pan and stirfry the mushrooms , leeks and garlic until soft

Whilst the leeks and mushrooms are sweating down pop salmon fillets onto a char grill pan and cook

Serve the mushrooms and leeks with the salmon and brown rice if using.

Add fresh green salad for that added touch of healthy-ness !!
