This dish is perfect for a summer lunch. Packed with vitamins , minerals and good old omega 3 !
Serves 2
2 salmon fillets
1 crispy lettuce either iceberg or little gem
250g fresh or frozen garden peas
freshly chopped mint ( a good handful)
olive oil & white wine vinegar dressing
I ripe avocado
Cook the peas for only a few minutes , drain & refresh in cold water to stop the cooking process. Toss in a dressing made of olive oil & white wine vinegar
Break up the lettuce and put onto plates , scatter over the peas and chopped mint. Toss together. Slice avocado and add to salad.
Grill the salmon fillets to your liking and place on top of salad.
Serve with more of the mint , dressing and warm new potatoes
