An excellent recipe for Summer to be served with pasta packed with vitamins & minerals and goes a long way as one of your 5 a day !
1 can diced tomatoes 1 tablespoon tomato puree
handful of small broccoli florets
a couple of thinly sliced carrots medium sliced onion large courgette - halved and sliced thinly sliced green bell pepper thinly sliced red bell pepper1 clove garlic, chopped 1 bay leaf
tablespoon of olive oil teaspoon each of dried basil ,rosemary ,oregano,thymesalt & pepper to taste
teaspoon of sugar ( to help sweeten the tomatoes but not necessary)
80 ml water
Simply put all the ingredients into a large pot , bring to a gentle boil and then simmer for 30 - 45 minutes until the veg are cooked to your liking. Stir occassionally.
Serve with fresh pasta and a nice big green salad
