This is my mum's recipe and is pretty good! Packed with loads of healthy-ness. Its a winner in my book!

Butternut Squash with  a difference

(Makes enough for 2 very generous servings)

Take :

1 butternut squash

1 large carrot

1 sweet potato

1 small onion

1 clove garlic

1 teaspoon of cumin

500 ml good veggie stock ( though you can use chicken stock)

1 tablespoon of olive oil

large bunch of fresh coriander ( don't use dried cos it won't taste the same!)

Here's how to make it :

Take onion and dice. Add to pan and gently saute until soften

Add diced butternut squash , carrot, sweet potato , garlic , cumin and sweat off for about 20 mins until slightly softened ( takes about 20 mins)

Add veggie or chicken stock and cook for a further 15 mins. Add coriander

Take off heat and process in blender until smooth (though a few lumps add texture!)

Serve with a nice chunk of fresh bread

Warms the heart and is excellent for the sacral chakra should you be feeling out of sorts!
