Take :

Large bag of spinach

4 tablespoons of double cream

Nutmeg

Salt & Pepper

Butter for greasing

250g smoked haddock

4 eggs

Poach smoked haddock in a little milk or water. When cooked flake to remove any  bones.

Wilt spinach in a little water. When cooked drain well to remove water, chop up & add cream, nutmeg and a little salt & pepper to tasteButter an ovenproof dish and put half the spinach in , add the fish and cover with rest of spinach. Make little nest-like holes in the spinach and break egg into each well. Dot with butter & sprinkle with black pepper. Cover with foil & bake in a tray of hot water in oven 180c until eggs are just set or to liking !Serve with brown bread & butter  and a green salad or steamed veggies for that extra touch.
