Wonderfoods Green Salad is full of differnet tastes and textures you sure to love it and served with the Nettle Quiche or grilled fish / chicken you have a meal which is so good for you your cells will be jumping for joy!!

2 handfuls of spinach leaves

handful of washed dandelion leaves

handful of watercress

1 thin slice of caggage thinly sliced

1/2 sliced cucumber

3 sliced spring onions

1 avocado, peeled, stoned and sliced

1 tablespoon of pumpkin seeds

handful of whatever sprouted seeds you have ( this ingredient is optional but sprouted seeds are readily available in Asda or have a go yourself. Take a look at the articel on sprouting seeds to find out how)

Make a dressing of :

1 tsp dijon mustard

1 small garlic clove crushed

1 tbsp of cider vinegar

3 tbsp of olive oil

sprinkling of salt and pepper to taste

Try all the salad ingredients and place in a salad bowl. Make the dressing and dress the salad just before eating. Delicious!
