This healthy salad is a great way of getting vegetables into your diet and its so easy to add a piece of steamed salmon or a piece of chicken to it if you want to ring the changes!

Vinaigrette :

1 shallot
2 garlic cloves
1 cup red wine vinegar
1 tablespoon Dijon mustard
4 tablespoons of organic brown sugar
2.5 cups good olive oil
1 cup of freshly chopped fresh basil
0.5 cup water ( ideally filtered or bottled)
Salt and pepper to taste

Chopped veggies :

1 yellow squash cut into small pieces
1 courgette cut in to ¼ inch pieces
1 aubergine cut into ¼ inch pieces
1 large red onion cut into ¼ inch pieces
Olive oil to brush over the veggies
Salt and pepper to taste
2 roasted red peppers
¼ cup black olives
¼ cup sun dried tomatoes

Salad :

Mixed salad leaves with plenty of spicy rocket

To make vinaigrette : place shallot , garlic, vinegar, mustard and sugar into a blender and blend until smooth. With the blender running add the olive oil. The dressing should emulsify). Add the basil and blend until smooth. Add water and continue to blend for a few seconds. Season to taste

To make the veggie salad : Brush both sides of the squash , courgette , aubergine and red onion and season with the salt and pepper. Grill on both sides until softened or roast in a medium oven for about 15mins. Once cooked chop all the veggies including the roasted peppers and sundried tomatoes into smaller pieces and pop in the fridge until cool.

To assemble the salad :

Toss the chopped veggies with a little salt and pepper and the basil vinaigrette. Serve on a bed of lettuce leaves
