I've started to experiment with eating raw and this recipe is fantastic as a start to incorporating more raw and therefore healthier food into your diet!

Go on have a go and serve with a nice green crisp salad on a sunny day!!

Pasta sauce :

3 tomatoes
1/2 avocado
1.5 carrots - grated
1 stick celery - chopped
30g sundried tomatoes
1 date
1 spring onion chopped
2 tablespoons olive oil
2 roasted red peppers
2 tbsps tamari  mixed with 1 tsp apple vinegar
2 tbsp fresh basil
1 clove garlic
1/2 red chilli (optional)

Put all ingredients into blender and blend until smooth

Veggies : 4 sliced courgettes (small) , sliced red pepper , sliced yellow pepper , sliced orange pepper , 3 sliced mushrooms

Mix half of the pasta sauce together with the slliced veggies and serve on bed of lettuce. Drizzle with extra virgin olive oil ( yes , its good for you) and top with sliced black olives. You'll think you're in the Med!!
