Salmon with braised cabbage and leeks
I love this recipe and I made it up one weekend when we were down on our boat – what with restricted cooking facilities I have to get inventive!! and its so easy and only takes 10 mins to cook.
Sliced leek
Sliced sweetheart cabbage
Salmon fillet – 1 per person
Salt , pepper , seaweed flakes (optional) and lemon juice
Olive oil
Saute the cabbage and leek in some olive oil until just wilted
Add the salmon fillets, season with salt, pepper and if you have any add a few seaweed flakes. Squeeze the lemon over the salmon.
Cover and gently cook until salmon cooked to perfection ( takes about 10 -12 minutes depending on thickness of salmon)
Perfect served with the RAW summer salad
