RAW Summer Salad

This is a delicious salad perfect on its own or with poached/steamed salmon. Packed to the gunnels with all things good you’re find you’ll have boundless energy if you try to eat this a couple of times a week!! What are you waiting for!!

3 sliced courgettes
1/2lb fresh peas
2 grated carrots
1 sliced red pepper
1 sliced yellow pepper
3 sliced ( segments) tomatoes
Tablespoon of fresh parsley
2 – 3 good tablespoons of Extra virgin olive oil
Juice of one lemon
Salt
Sprinkling of seaweed flakes ( optional)

Mix all the vegetables together in the dressing of olive oil & lemon juice and serve
