Mushroom and Courgette Quiche
Take
8" flan dish
I packet of ready made shortcrust pastry ( or buy ready made flan case)
6 large mushrooms - peeled and sliced
1 large courgette - sliced in 1/4" rounds
4 eggs
1/4 pint full fat milk
1/4 water
2oz grated cheese
a few sprigs of fresh thyme
Here's how:
Roll out pastry and i fit into the 8" flan dish
Gently saute the mushrooms and courgettes in a little olive oil until softened
Place in the the pastry case.
Break eggs into a bowl and beat. Add the milk, water , chopped thyme and grated cheese
Pour egg mixture into flan case covering the mushrooms and courgettes
Bake in oven 180'c for 35 mins or until set
Serve with large green salad and homemade coleslaw
