Healthy coleslaw - this is a healthier version of the coleslaw you can buy in the shops and this recipe will make 8 servings

This coleslaw is best made a few hours in advance because the oil and lemon starts to break down the cellulose in the veg helping to soften them

If you really can't bear coleslaw without the creamy dressing them add a couple of tablespoons of mayo instead of the oil dressing!

Take

I head celery - washed and sliced

I red onion - sliced thinly

1/2 small red cabbage - sliced thinly

1/2 small white cabbage - sliced thinly

2 carrots  - grated

4 tablespoons of extra virgin olive oil

2 tablespoons of lemon juice

1/2 teaspoon of sea salt

Place all the sliced ingredients into a bowl.

Make dressing of oil, lemon juice and salt and pour over the veg stirring well.
