I created this recipe when I was looking for an alternative to one of my favourite veggie meals - Spicy Chickpeas. I think its FAB and offers loads of nutritional value to the body. Packed with enzymes , B vitamins , antioxidants and iron it really does do the job of being a powerhouse of a meal.

RAW Spicy Chickpeas

1 thinly sliced red onion
3 sliced spring onions
Tablespoon lemon oil
Juice ½ lemon
Teaspoon white wine vinegar
½ teaspoon dried oregano ( or tablespoon of fresh)
½ teaspoon cumin
¼ teaspoon date syrup
¼ smoked chipotle chili
¼ teaspoon Himalayan sea salt

Marinate all the above together for a couple of hours to allow the flavours to mingle and the onions to soften

Mix together with spinach, tomatoes , sundried tomatoes & sprouted chickpeas/lentils and mung beans.

Enjoy served on Romaine lettuce leaves with a side of nut cheese
