This is a spin on the conventional Russian Salad which is usually high in calories of teh not so healthy kind. Don't be concerned with the amount of nuts in the nut mayo part of this recipe. Nuts contain good unsaturated fats which provide energy

Raw Russian Salad

Firstly make the nut mayo

1 cup water
1 cup blanched almonds
1 cup pine nuts
1 ½ cups cashews
Himalayan sea salt to taste
1 tbsp apple cider vinegar
2 tbsps lemon juice

Add all the above ingredients into blender and blend until smooth ( takes about 5 mins)

Then:

Chop 1 sweet potato into small bite size pieces
Dice 1 carrot quite finely
Finely chop 4- 5 spring onions
Take 2 tablespoons of fresh garden peas

Mix these ingredients with enough of the nut mayo to coat
