Thankyou Nicole for this superb recipe I posted a request for wild garlic recipes on Facebook and she came up with this one and its fantastic and very moorish!!

Veggies - Potatoes, carrots, cauli, leeks and mushrooms and wild garlic

You slice and steam the potatoes & carrots, and steam the pieces of cauliflower. Fry the mushrooms in a pan with a little olive oil, add the leek & fry until soft, and add the wild garlic at the end.

You layer an oven-proof dish with half of the potato slices then put your vegetables in and finish with another layer of sliced potatoes on top. You prepare a cheese sauce ,pour it over the potato slices and vegetables, and put the dish in the oven with a sprinkle of paprika, nutmeg and pepper on top and bake until golden brown.


For the cheese sauce, you melt about 2 tbsp butter/margarine in a pan, add about 2 tbsp flour and whisk it into a thick paste. Add 2 or 3 bay leaves. Then add some milk and keep whisking until it becomes a thinner paste and starts boiling. Keep whisking all the time, adding more milk until it starts boiling again. Keep adding more milk and let it start boiling and thickening till the sauce has got the right consistency. I add a little bit of cayenne pepper and a tiny bit of English mustard at the end, switch off the cooker, then add about 120-150g of grated mature cheddar cheese, and whisk the sauce until it is creamy.
